Paleo Pumpkin Pecan Custard

 

Pumpkin. Because everyone knows that pumpkin flavored everything is a staple for fall weather. Even though the day I made this is was 40 degrees and raining, nothing will shut down my love for all things plaid and pumpkin. I was looking on pinterest for paleo inspiration and I was not disappointed.

Recently I have decided to take most sugar out of my diet excluding some berries in the morning. I am trying really hard to kill my sweet tooth. I am doing this mostly because I find when I don’t have much sugar in my diet I feel a lot better. I don’t have bloating, stomach cramps, or grogginess. I just feel all around better. All of these positive side effects are fantastic, but that still doesn’t change that I love to bake and more importantly I love to eat baked goods! I picked this recipe because I felt like it would indulge my need to both bake and eat something slightly sweet and fall flavored.

When I tried this recipe, I realized it wasn’t very sweet at all, but it was still delicious and good for me! My body felt great and my taste buds had a party. It was simple to whip together and I ate on it all week. It ended up being my afternoon snack or for after dinner grazing instead of breakfast, I honestly think you could eat it for every meal and be happy!
