This might actually be the best thing I have eaten. Now, realize that I haven’t even eaten a biscuit in like 6 years, but in my small world of good food. This is one of the best savory recipes I have ever made. I have already made it 3 times within the last 2 weeks…so if you do the math, I have eaten this 9 out of the last 14 days…

You know something is going to be good when it has the word pizza in it, but somehow it tastes even better because you know you can eat it guilt free. I got the original recipe from one of my favorite Instagram accounts, Paleomg. All of my food allergies make it very hard for me to find recipes I can actually use, and although I don’t exactly follow a “Paleo” diet, I seem to use a lot of their recipes.    **Also, if you are someone who is going gluten free or has Celiac Disease, Paleo is a perfect option for you. They don’t use gluten in their recipes, because Paleo diets are high in healthy fat and protein and low in traditional carbs. So, here are the delicious ingredients you will need to make your kitchen the happiest room in the house.

Ingredients:

1 medium spaghetti squash

1 lb of lean breakfast sausauge

½ yellow onion

Italian seasoning

8-10 oz pizza sauce

10-15 turkey pepperonis

Optional:

1-2 servings of Daiya shredded mozzarella cheese (the only good allergy-free cheese in my opinion, it actually melts).

Any other pizza toppings you like.

Directions:

  1. Preheat your oven to 450 degrees

  2. Start with your spaghetti squash. Poke some holes in random parts of the squash with a knife and put it on a plate and stick it in the microwave for 11-12 minutes. Many recipes will tell you to bake it, but it takes almost an hour, and this does the exact same thing. Save yourself some time, we all know we need more of it.

  3. While your squash is in the microwave, cut up your onion (use this as an excuse to cry a little if you have had a bad day) and cook your sausage and onion in a non-stick skillet until your sausage is cooked and your onion is translucent.

  4. By this time, your squash will be cooked. Take out of the microwave and cut it in half (hamburger way), scoop out the seeds and then use a fork to scrap out the “noodles”. It should be very easy as long as you cooked it long enough.

  5. Now comes the easiest part. Just add everything together. Mix your “noodles” with the sausage and the onions, add pizza sauce, 3 eggs, cheese, and pepperoni. BOOM! Simple as that!

  6. Put in an 8x8 glass dish or a spring form pan and cook for 45 minutes.

  7. When you get this out of the oven, expect for angels to sing. If you don’t have angels handy, just play some happy music from your phone. This recipe deserves it!

There are 3-4 servings from this recipe (I make it 3, because I am hungry girl training for an ultra-marathon).

The Macros for this recipe depend very highly on the ingredients you use. I made mine a little healthier by using low fat sausage. You can also omit the cheese; it is very good without it. Also, you don’t have to add the pepperoni. I was just feeling a little wild, and I am training A LOT, so I can have a little more fun with my food at the moment.

If you are a vegetarian or trying to lose weight, you could make a meat free version and save a lot of the calories. You can be creative with this recipe. This is a very good base for other recipes, and I am sure I will make in 100 different ways with whatever I have in my fridge.
