B's BD Paleo Chocolate Cake!

So I have this thing about birthdays. I think it is really really important for everyone to have a special cake on their special day. I know this sounds goofy, but it’s the one-day of the year that you should be the center of attention. I have taken it upon myself to be the official dessert/cake maker for the special people in my life. I even do it for my co-workers. Anyway, I think you get the point. Every since I got diagnosed with food allergies, it is my mission every year to bake myself a really good cake. I only do this once a year, for many reasons. 1. Baking a cake for me is pretty expensive (it takes a lot of special ingredients). 2. Sometimes they turn out horrible. 3. I can’t eat a whole cake by myself. 

So, many of you don’t know this, but my food allergies get tested pretty frequently. This is because I seem to keep adding foods to the list of stuff I cant have. Last year was the first year without rice or soy. This might not seem like a big deal, but it is. Almost all gluten free baking mixes are made with rice flour, and almost all dairy substitutions are made with soy. So…needless to say, my cake last year was really weird and gross. I’m not even going to lie, I used almost a whole jar of peanut butter on top of it make it edible. I will be darned if I don’t try to stuff cake down my throat on my birthday!  This year I redeemed myself! Even though I don’t bake myself cakes a lot, I do bake other things. I have discovered coconut flour and almond flour since my last birthday! These are both great substitutes for those with food allergies, or if you want to try something different! My cake turned out delicious this year, so I wanted to share the recipe with you! 

Cake

¾ cup coconut flour

½ cup dark cocoa powder

1 teaspoon salt

1 teaspoon baking soda

1 cup coconut oil (melted)

10 eggs

1.5 cups raw honey

1 tbsp vanilla extract

Directions: 

-Preheat oven to 325 degrees.

-Put dry ingredients into a bowl

-In separate bowl, mix wet ingredients together with an electric mixer. After wet ingredients are combined, begin to slowly add in dry ingredients. 

-Grease 2 9-inch round cake pans and cook cakes for 30-35 minutes. Let cool completely before removing. 

Filling

1 cup dark cocoa powder

¾ cup coconut oil (melted)

½ cup honey

dash of salt

1 tbsp vanilla 

*we came to the conclusion that this mixture tastes like an Oreo truffle, so we put it in between the two cakes. 

Directions: 

-Melt coconut oil in microwave for around 30 seconds

-Mix all of the ingredients together in a food processor or by hand. 

-Put mixture in between the two cakes after they are cooled. 

Chocolate Ganache 

2 cups chocolate chips (enjoy life brand)

2-3 tbsp coconut oil

Directions: 

-       Mix two ingredients and put in microwave for 30-second increments. This will take less time than you think. Stir between each increment, and it will come together quickly. 

-       Poor on top of cake and let harden! 

* I garnished it with strawberries, because I felt like it needed something fresh (it was a good decision)! Whipped cream would be good too, if you don't have problems with dairy! 

I thoroughly enjoyed this cake yesterday (and maybe a little for breakfast today)! So even though yesterday was my B-day, this is my gift to you!

P.S.  Just a reminder that balance is what keeps not only our body healthy, but our mind as well! This cake is technically “Paleo” if any of you are on that kind of diet (low carb-high fat). I had a wonderful birthday, and felt extremely loved by the people in my life! I cannot wait to see all of the wonderful things that happen this year, and I certainly cannot wait to keep sharing healthy info with you all!
